Meal Planner 1


Breakfast

BACON AND EGG IN A SACK
For Each Camper -

2 Strips Bacon
1 Egg
1 Paper bag
Put bacon in bottom of sack. Break egg over bacon. Roll sack down in 1 inch folds. Shove a sharped stick through folds. Place over coals (not on coals). If you have really hot coals oil the bottom of the bag first. (Use charcoal and a grill if you want)

BISCUITS IN A BAG

2 c Biscuit mix
¾ c Milk
Oil
Brown paper bags
Canned biscuits can be substituted. Mix biscuit mix and milk. Oil bottom and wall of bag. Put biscuit in bag. Bake over coals (not on coals). Bake one side for 2-5 minutes then flip biscuit over and bake 2-5 minutes on other side.


Lunch

Should be simple such as:

ALL AMERICAN SANDWICHES

1 pkg cheddar cheese sauce
1 cup milk
1/4 cups mayo
2 tbs mustard
½ lb deli turkey, diced
½ lb deli ham, diced 1/4 cups chopped walnuts
1 green pepper, diced
8 deli rolls, split
Sliced tomato
sliced onion

Prepare cheese sauce as package directions with milk. Stir in rest of ingredients, except tomato and onion. Let cool and chill in cooler. Spread on rolls when chilled with tomato and onion slices.

Or cold cuts or other simple sandwiches.  Don't forget the import stuff such as drinks and chips.

 


Dinner

GUADALUPE CHILI PIE

2 lbs Browned and Drained Ground beef
1 Medium finely chopped Onion
1 Tbs Butter
2 cans Mexican Chili beans
1 Tbs Chili powder
½ tsp Salt
½ tsp Dried Hot peppers
2-4 small Diced assorted chili peppers
1 8 oz can tomato sauce
1 box Cornbread mix

Make corn bread per directions. Brown beef, chili peppers and onions into the butter in open Dutch Oven. Drain fat. Add beans, chili powder, dried peppers, salt and tomato paste. Cook for 15 minutes. Spread cornbread on top of meat mix and bake for 20-30 minutes or until cornbread is done. This dish can be made hotter and spicier to taste by adding Jalapeno or Habanaro peppers.


Desert

UPSIDE DOWN PINEAPPLES

1 Can Drained Pineapple Rings Keep Juice

½ c Brown Sugar

1 Box White cake mix

Prepare cake mix according to instructions on box. Line #12 Dutch oven with foil. Butter foil. Drain juice off of pineapple rings and line the bottom with rings. Sprinkle brown sugar over rings. Sprinkle 2-3 tablespoons of juice over sugar. Prepare cake mix per instructions on box. Spread over rings and sugar. Bake till cake is done (25-45 minutes)
